the difference between couscous and your ITALIAN CENTRIC definition of pasta is simply preparation. the ingredients are the same. gnocchi is made from an entirely different thing

I’ve made gnocchi (though not for about ten years) and the preparation and cooking of them make them seem like pasta to me.

Plus, they have potato, but my memory is they have an equal part wheat flour. So ingredient wise it’s pretty pasta-y.

If you’re not going to allow gnocchi then it seems odd that you’d allow tortellini, which is the same wheat flour base (pasta literally means paste) with other stuff added... is it the stage of preparation where the additional ingredients are added, that determine whether something is a pasta? It’s all getting a bit theoretical
