also, salt is a natural preservative. and since soy sauce has a lot of salt in it, it just makes sense.

thats what i thought... i have a bunch of individual packets and i always keep them in the fridge.... now i know i don't have to!

Nope. If the bottle doesn't say refrigerate after opening, you're in the clear.
