At the Bickford's in Providence, RI they call it disco fries and it's one of those things that only they serve and you have to ask for it because it's not on the menu. One of my friends probably invented and named it in a post-goth club drunken haze. And it's not mozzarella or curd cheese, it's melted american cheese and gravy. It's deee-licious. And yes, I have had poutine before.

they call it disco fries here too - walk into just about any diner in new jersey and it'll be on the menu. and yeah, generally it's melted white american cheese but i prefer mozzarella.
