i'm not saying it's all downsides, but there are some major things that got very warped.

and not having a cell phone is not really an option these days.
i'm pretty sure anyone who insists on not having a cell phone will never be able to get hired to do almost anything

There is no problem with cell phones. It's all in how you decide to use them.

But yes it can be a total pain in the ass to deal with people who refuse to adopt basic technologies.

countless hipster coffee shops that are engaged in an escalating battle to see who can use the most obscure brewing process. One opened downtown last year that refuses to serve their coffee 'to go'. They only serve in cups because walking out with it in paper does not support their high standards.

hipster coney dogs seem to be a thing now. Conies have always been a Michigan thing. they weren't supposed to cost a small fortune, but now even a fucking chili dog is artisanal.

Bakeries are a thing here right now too. With names like "Field and Fire." There is one that started last year that sells only bagels and only for a few hours every morning. So at 6am every day there's a line of people waiting for their door to open. Granted, they're traditional NYC style bagels and they taste great, but jesus christ it's a BAGEL! Then there's Propaganda Donuts (same thing as the bagel shop but with donuts).

A new BBQ joint opened this month. granted that barely anybody in the North understands real BBQ. This place is good, but because it hit on all the correct hipster notes when it opened it now closes everday 3 hrs after opening because all the bbq is gone. Another similar place is opening soon. Why don't all these people craving BBQ go down to the South side of the city where there are a dozen amazing BBQ joints? Maybe cause the non hipster BBQ is in black neighborhoods.

Also there's the hipster ramen and udon shops. And the ever increasing number of artisnal pizza shops. Wood Fired pizza is way old. Now it's all about making crust out of shit that isn't pizza, like cauliflower.

I'm far from being a smartphone addict. I use my phone as a phone, I don't even have apps on it.

I think I read somewhere that Israel has one of the highest smartphone per person ratios in the world, so yeah, opting to not have a cell phone is not an option.

My previous workplace even gave me tons of shit at my refusal to use whatsapp

I think I might have a chance with my idea for a hipster restaurant that serves only Pasties. It's been a thing in Michigan for 150 years. It's a simple portable meal that has always been filling and economical, usually served 'to go' at road side Pasty Shops. That makes it perfect for hipsterfication. Just use expensive organic or local ingredients and charge twice as much.

Slunken, can you elaborate on what exactly constitutes a hipster restaurant? The only example in my area which fits your critera is a cafe that serves overpriced waffles and now attracts hoardes of young females, after re-branding and re-modelling (which really means a black paint job and some new stools). I think I know what you're talking about, but don't have a lot to go on

i had some poutine at smoke's in halifax with lobster (eh, i like trying), it wasn't good cause of the fries and so really not worth twice the price of all the others

they cook all their fries in duck fat. and they offer poutine with shredded duck, which is tasty. but lately instead of serving the poutine with fries, they've been serving it with "home fries" which are dice and fried potatoes. they're trying to put some kind of culinary spin on the dish and that just doesn't work.

are hipsters with trusts funds a thing in every other place in the world? around here hipsters use the 'counter culture' excuse to not pursue any sort of career and instead work part time hours at giant supermarket chains. hmm. they wouldn't even want to pretend to be able to afford to eat at any of the trendy, expensive restaurants discussed in this thread.

personally, i don't hate them - they've opened all around me. there's a spot that opened in my condo building that serves the likes of "ARCTIC CHAR TARTARE -
watermelon radish, shallot, cured egg yolk, kimchi" unlike many, who despise restaurants that don't serve pizza or tacos, it makes me disappointed that i'm not a more adventurous eater. i'm pretty picky, and it's one of the main things i wish i could change about myself. and i'm working at it.

Menus are usually single sheets of loose paper. The decor looks like it came from a stylish magazine. The food is lite yet pricey. It somehow feels less formal yet way more formal than a typical restaurant. It's over quicker than you expected and you're hungry a few hours later. You usually see them cropping up in areas where extensive urban revitalization and gentrification are happening. Entire facades suddenly look like strip malls and women can feel safe walking the streets, eating and shopping at these fine new local growth commerce establishments.
