butter is preferred, they both work - ice cold water(put ice in the water damnit, cold is key), and don't handle it too much.

So butter makes tender crust, and shortening makes flaky crusts for pies.

Mark, when are you coming over for dishes? I have pie to offer this time around.

fresh herbs over dried whenever possible.
- growing your own is easy and worth it.

get a decent knife. just one decent, sharp chef's knife and a sharpener. it makes everything easier. Henkells makes a cheapish one at around $30 CAD and it will last you forever.

let meat cool before you cut it. i know you're excited, sitting there looking at it as it seduces you meatily on the dish, but just wait few minutes.
if your steak is almost done cooking to perfection, take it out and put tin foil over it- not too tightly. it'll just finish cooking and then cool a bit so you can cut into it and have the juices stay IN the meat instead of running out. sorry to all vegetarians who just read this.

fresh tomatoes with a little salt, pepper and balsamic vinegar over it is underrated.

when you're frying things like veggies at a high-ish heat and you want to use butter, put in a bit of olive oil first, and then the butter. butter burns at a lower temperature than oil and the oil helps prevent the butter from burning. that sentence didn't make sense, but fuck it.

half a can of condensed tomato soup (don't add the water) with lots of butter and some pepper on macaroni noodles is tastier than kraft dinner.

grilling asparagus after you cover it in bit of olive oil and plenty of coarse salt is 32942094334938 times better than steamed asparagus. you can also broil it that way but grilling is best. i've served this to people who never liked asparagus and they loved it. disclaimer: your piss will still smell fucking horrid after you eat the asparagus.

bonus: if you don't roll the dough thin enough for beef wellington you will have an insanely delicious piece of meat trapped inside a thick and somewhat undercooked crust. THIN. ROLL IT THIN.

i cannot stress this enough: if you're having someone over for dinner and you want to impress them, don't go trying to make some crazy shit you've never made before. make something you know how to make and make it well. and supply booze.

Always stir your pasta directly after adding it to the water, or else it will stick together. Also add a teaspoon of oil to help with that. And the Italians say you pasta water should be as salty as the mediterrianian – so use a lot of salt.

Err….

A little baking power + milk + butter in mashed potatoes is great.

Err…
Peaches go really well with lamb chops.
I have an awesome recipie for quality lamb chops, succulence guaranteed.

I have more.

This is an old thread.

I can't really stir pasta around directly after adding it to the water since usually it sticks out of the water, but I guess stirring it instead of letting it sit would be a good idea.

I have to say though, salted noodles + olive oil enhances the taste.

When cooking a steak, you should only flip it once.

I made French Dip Sandwiches the other night. That was outstanding. I made alfredo sauce for the first time. Also outstanding.

I have a challenge in the freezer: a whole chicken.

I think if you don't know this you shouldn't be cooking steaks.

That goes double for anyone who eats their steak well done.

A few friends enjoy cutting tomatoes in half, filling them with vinegar and a bunch of salt, and then sucking / eating them till finished.

I have not tried it.
But they assure me it’s great.
