Do you remember that cute egg cooker thing I found once? I bought a different one and it was useless. Never buy one.

cast iron skillets r #1 cause you can use them for baking, too. i've made cornbread, baked mac n chz, and roasted a bird in it in addition to all the regular junk that gets cooked in there.

last night we had homemade chicken noodle soup (without chicken + kale) and made our own fried oreos. the recipe for that was easy.
3 cups all-purpose flour 3/4 teaspoon baking soda 1 1/2 teaspoons baking powder 1/2 tablespoon kosher salt 1 tablespoon sugar this was reduced by 1/3 and more than enough for a 12-pack of oreos with the above mix (or 2 c. of boxed pancake mix if you use that instead), use this recipe: http://deep-fried.food.com/recipe/st...cookies-156223 this was my first time having fried oreos since the first time i had them over 4 years ago at the texas state fair and loved them so much. ;_; |

Scrambled eggs, the most commonly fucked up breakfast item. I can't even explain how angry i get when I'm served badly scrambled eggs.
the key is to do it slow and not overcook. they shouldn't brown. they shouldn't be a solid mass. They should be slightly runny and soft. 3 eggs, whipped thoroughly with a fork two tbsp of unsalted butter melt the butter on low in a nonstick pan. make sure the butter is completely melted and pan hot before pouring eggs into pan. but don't allow the butter to burn. Once the eggs are in the pan move it around with a silicon spatula. Keep the eggs moving in the pan so they don't firm up too much or brown. It should take 3-5 minutes. If the cook faster than that the pan is too hot. Once the consistency is right, plate them, salt and pepper to taste. I also like Gordon Ramsay's scrambled eggs recipe...it's a bit more complicated. i do it his way about half of the time at home. It's tricky to do it in a sauce pan, though, if you've not done much cooking. |

I also think Roasting a chicken is easy (if you have an oven). keller's roast chicken recipe is as simple as it gets. you can skip the wishbone removal if you want to speed up the prep.
whole chicken at room temp. tie-up the legs. salt and pepper. put in a 425F oven for 45 min to an hour. after cooking let it sit 10-15 min before you carve the bird. I do mine the same way, except I like to rub unsalted butter under the skin. |

i like my toaster oven chicken. its not any different than the regular oven, except - you know - smaller. and if i make something with chicken i'll need to bake it anyway so it'll still be toaster oven chicken
