over the years my favorite cookbooks have been:
http://1.bp.blogspot.com/_kM95ILzXjJ...s_cookbook.jpg self-explanatory. the recipes are unique, lots of variety. good to have when you want to make something simple, but not too ordinary. my mammy gave it to me years ago. http://farm4.static.flickr.com/3281/...852e02413a.jpg checked it out from the library after flipping through it and finding a lot of good stuff. made a handful of the recipes and always wanted to purchase it to make some more but never got around to it. easy to follow and not a lot of stupid pictures. http://www.blogcdn.com/www.slashfood...ional-cook.jpg new one i got recently at open books. i saw it as we were walking up to pay. it's great. lots of suggested flavor combinations. basic recipes for sauces, soups, and the like with variations thereof. with that it's easy to come up with your own and i like to mess around in the kitchen, anyway. this book is pretty much like a guide. the cashier said it was a good choice and i was excited to get it home and flip through it. and he suggested this one: http://cooking.blogoverflow.com/file...ible-cover.jpg |

Stop putting the them off!! There are only tomatoes and maybe salt in the can, that's a step in the right direction at least. That sauce will be much better than a jar of premade stuff, don't you reckon?

I use them all the time because they're so easy to open and pour into a pot. I love fresh tomatoes with olive oil and sea salt and pepper. But once you cook them there isn't much of a flavour difference. I tend to think of cooking fresh tomatoes as a waste because they're expensive here and so delicious to eat raw.

I don't follow. How is cooking fresh vegetables a waste, but to empty a can isn't?
As for the easy part: to skin and steam tomatoes isn't hard either. |

It's a waste to cook fresh tomatoes here because they're expensive is what I'm saying, and canned are cheap..and once they're cooked they taste very similar. But I love raw tomatoes so fresh tomatoes, I eat raw.

Some things should never be canned. Green beans. Mango. Mandarin segments. Cherries. Strawberries. Chicken. Potatoes. But some things are fine. Chickpeas, lentils, kidney beans, tomatoes, corn kernels.

TROTSKY'S SUPER EASY SPAGHETTI SAUCE
1 12 oz can diced tomatoes 1 4 oz can tomato paste 1 12 oz can tomato sauce (unsalted) pinches of oregano, basil, sugar, salt, pepper 1 bay leaf a little red wine (basically rinse out the cans with it) lots of garlic (whole or powdered, to taste) 1/2 bell pepper 1/2 onion bunch of mushrooms put all the stuff in a pot (except the mushrooms, depending on how long you're cooking it) bring it to boil, then turn down to simmer and cover let it cook for a while, stirring every now and again put the mushrooms in towards the time you're ready to eat so they don't shrivel up into nothing meat is up to you, i often just make italian sausages and serve it with it but you can also use ground beef and you can cook it in the sauce if you're patient or you can just pan cook it and pour it in (make sure to drain most of the fat, but not all of it) eat one of the best things about this is that it takes a long time but it's so low energy that you can watch football game(s) while you make it, you know getting up at every commercial break to stir and by the end it's probably ready but you can cook it even longer if you wish. here's another one
TROTSKY'S CREAMY CHICKEN OR SHRIMP PASTA THING get a lot of chicken or shrimp sun dried tomatoes mushrooms whole cream ('cheah boyyyy) pepper penne pasta slice the sun dried tomatoes and mushrooms and chicken into strips that are easy to pick up you feel me cook the chicken or shrimp until it's done (i should mention you should probably cook the chicken first and then slice it, easier.) boil the pasta then when you get all that, throw all the mushrooms, tomatoes and chicken/shrimp in a pan and pour cream all over it boil that cream until it turns a blonde color and is a little viscous then you just pour it over the penne, toss it, add pepper and oregano or whatever spices you like and it's ready to go |
