Default made french onion soup tonight

i went around town and spent some of my tax return on a dutch oven and a set of soup crocks. then we spent an afternoon buying all the ingredients.

it took about an hour and a half and it was probably the most complex recipe i've done, but it turned out to be so delicious. i feel like a king.

Onion soup doesn't have to be complex, what made this recipe so complex?

This comes from someone who has never successfully cooked rice unsupervised

i mean complex compared to what i normally can cook. not only used sweet onions but also a leek and some shallots. i thought that really broadened the flavor.

I made sweet and sour pork with broccoli and brown rice.

i baked a pork chop w/o seasoning etc, steamed a ton of broccoli in the microwave. mixed with already cooked brown rice from the fridge and some kikkoman sweet and sour sauce. cooked in microwave for 2 more minutes. added sesame seeds to mixture. mixed again.

chinese food takeout go fuck yourself!

this is really one of my favorite things to cook. usually make it with chicken but had some pork thawed.

total cost is approx $3 and it's enough for two people

this is as complicated as i go

saturday we cooked beef stroganoff from two different recipes - tim choosing betty crocker and i picking one from a book called 'Cooks at Home"

first we sauteed sliced onion, mushrooms and garlic. then we added white cooking wine and chicken broth on high and cooked out the liquid before making a roux and adding sour cream and a pinch of dill.

meanwhile, we mixed ground beef with finely chopped onions, a whisked egg, oregano, salt, and pepper and made meatballs that we cooked on the cast iron.

we added those to the sauce and served on top of egg noodles. bing bang boom.

we also made spinach artichoke dip on Sunday. i didn't like it so much because i could taste the processed cheese, but that didn't stop me from eating it. i just didn't finish it all. next time we'll have to buy a better soft cheese - at least a pure one. 100%.

all subway ingredients (other than i guess vegetables, which are usually of sub-standard quality) are every bit as processed as any fast food joint how else do you think they charge 5 bucks for a footlong.

admit it, they suckered you with their bullshit "healthy" advertisments

i hope this subway cheese issue that is brewing doesn't turn into a hopeless debate driven by ego, personal anecdotes, and nitpicking semantics.

edit: that being said - the cheese at subway is definitely a grade or two above a kraft single cut into isosceles triangles. BUT i've been to one too many with sad and limp veggies. And Subway pumps out a disgusting odor. The best decision i can make is not to buy a sandwich i could make myself.

i dunno it's pretty easy to tell it's processed cheese but if you're too dumb to notice that then enjoy your "high quality" 5 dollar sandwich

french onion soup is delicious. especially in a bowl loaf. when you're done the bread is soaked but still has a nice crispy crust on the outside. yow.

did you top it with any swiss or parmesan cheese?

You gotta top the soup with thick slices of day old baguette and then top the bread with like ementhal cheese, and then shove the whole bowl under the grill until the cheese bubbles.

Also, it's a tough soup because you have to finely slice half a dozen onions and then caramelise them in butter. That's a lot harder and more tedious than it sounds, if you want to get it right!
