i don't think i've heard many people call it deep dish in the ten or so years i've lived in chicago. they usually just say the restaurant, like lou's or giordano's. and i think those places call it "stuffed pizza." most places have tavern-style thin crust pizza.


buffalo ny has my favorite style of pizza.

Stuffed, pan, and deep dish are all different, distinct forms.

Traditional Chicago style would be the tavern style.

All are good.

I had my share of jumbo slices and if that’s your pizza ideal I cannot trust your taste.

I do kind of like Detroit pizza... but I prefer proper thin crust. Detroit has a more spongy crust with a crispy edge. It's baked in a sheet pan. But it's only usually about an inch thick and the ingredients are arranged properly. I like it mainly because i hate the crust ring on regular pizza and with Detroit pizza the pieces are square and the toppings go right to the edge.

I don't think I've ever had a proper deep-dish pizza. I've ordered things called "deep dish," but instead of being those deep-ass casserole-looking things I see in online images, it's just, like, pizza where the toppings are slightly more inset into the dough and the dough forms a ridge around the pizza.

You guys motivated me to order a deep-dish pizza tonight. And again, it's the same "deep dish" that I remember getting in the distant past; just a slightly different pizza shape from your standard pizza.

Maybe nowhere in my city does it properly? Do I gotta drive to Illinois or some shit?

When the base is good, I'm not sure that much else matters. I could happily dine on bones with garlic and oil (no shrimp).

What do you even consider proper thin crust? And where in Chicago have you had pizza?

pinnacle of this is neapolitan. the crust is divine; lovely leoparding and flavor. sauce and cheese are just a bonus
