I made something from a cookbook that involved having buttered potatoes in the oven for two hours. I thought that's crazy long, they'll come out black.
Two hours later, they came out black. |

You been to any palaces teh bollz? When I was little my parents and I went to the forbidden city in beijing. barely remember shit and the next time i was there i could only look at it from outside i was so broke. but i have been to the gyoengbukgong palace in seoul in midwinter. it was epic!

A good red sauce indeed is very very good but it can be a pain to make. I find that roasting tomatoes, mirepoix, and red peppers makes the best sauce base but that's a lot of pans to clean. Or also anything San marzano is worth it

i started growing a hot pepper and a tomato plant. got a few blooms on the tomato plant.
bonnie do you have any experience growing herbs? is it worth it? fresh herbs vs dried bottled herbs? i already know the deal about 1/3 dry herbs vs fresh herbs unless used as a garnish. just wondered if you grew anything that you felt was worth it more vs buying. maybe green onion? garlic? |

I grow herbs on my fire escape. This year I have thyme, "pesto perpetuo" basil, lemon balm, and parsley. At my parents' I'd grow more. They have parsley volunteers and basil, garlic, (too much) oregano and sage, and chives. If no others, then grow parsley and basil. Chives are also too easy but best suited to the ground. My favorite thing to do with chives is to make a flavored vinegar with the flowers.

I use dried herbs as needed but I'm not aware of any rules involving them. There's no replacement for basil and parsley, I feel. I like to boil up some new potatoes and then sautee them in high quality butter and toss with fresh parsley. Nothing beats the smell and taste of fresh basil. I'm not southeast Asian so I don't cook with it and haven't grown it but I enjoy approximately 100 leaves of fresh Thai basil in my pho

So yeah go for it. Fresh is nearly always preferable to dried. Grow as much as you can. It's wonderful.

from what i've read, in terms of ingredients (not garnishes), there isn't any real difference between bottled vs fresh herbs (other than using 1/3rd the amount of bottled vs fresh)
was just curious about if that really mattered. planned on getting a cilantro and basil plant regardless. then possibly rosemary and thyme because why not. |

the amount of time it takes to clean a garlic press rivals the time it takes to mince garlic by hand. i'm conflicted. |

i used a garlic chopper my mom sent me until it broke, but i'd never buy one myself. if i need it minced i will either do it by hand or use a grater.

your comment about "taste" seemed a bit shitty and i left a shitty reply.
when added as a mixed cooking ingredient, dried vs fresh doesn't make as much of a different as opposed to using the herb as a flavoring garnish. i was curious as to what herbs you feel necessary to grow fresh vs which ones you're willing to compromise and buy bottled. |
