Yeah there are definite similarities between the two. But don't tell them that!

I made something from a cookbook that involved having buttered potatoes in the oven for two hours. I thought that's crazy long, they'll come out black.

Two hours later, they came out black.

If it's black, send it back. If it's brown, drink it down!

So good.
A good red sauce indeed is very very good but it can be a pain to make. I find that roasting tomatoes, mirepoix, and red peppers makes the best sauce base but that's a lot of pans to clean. Or also anything San marzano is worth it

tbqh i generally prefer nature and landscape-y activities more than going to temples, palaces, etc. and there are some gardens/temples i've been to here as well.

i did go to summer palace+forbidden city in beijing back in like 2008, but wasn't really that mentally present i now realize, because i don't remember much. but when i went to japan i visited a big shrine in Asakusa. too bigtime and touristy for my tastes tho.

i do remember stumbling across a very small shrine of some sort, hidden away in a cemetery around Shinjuku. i originally only planned to go inside and snap some photos, thinking i'll post them here later as a joke with cork_soaker (which fittingly, like bill o'corrigan's promises, failed miserably in coming to fruition), but i found this shrine where people prayed humbly and silently and even though i'm not a religious person i found myself praying there too.

i started growing a hot pepper and a tomato plant. got a few blooms on the tomato plant.

bonnie do you have any experience growing herbs? is it worth it? fresh herbs vs dried bottled herbs?

i already know the deal about 1/3 dry herbs vs fresh herbs unless used as a garnish. just wondered if you grew anything that you felt was worth it more vs buying. maybe green onion? garlic?

I grow herbs on my fire escape. This year I have thyme, "pesto perpetuo" basil, lemon balm, and parsley. At my parents' I'd grow more. They have parsley volunteers and basil, garlic, (too much) oregano and sage, and chives. If no others, then grow parsley and basil. Chives are also too easy but best suited to the ground. My favorite thing to do with chives is to make a flavored vinegar with the flowers.

I use dried herbs as needed but I'm not aware of any rules involving them. There's no replacement for basil and parsley, I feel. I like to boil up some new potatoes and then sautee them in high quality butter and toss with fresh parsley. Nothing beats the smell and taste of fresh basil. I'm not southeast Asian so I don't cook with it and haven't grown it but I enjoy approximately 100 leaves of fresh Thai basil in my pho

So yeah go for it. Fresh is nearly always preferable to dried. Grow as much as you can. It's wonderful.

from what i've read, in terms of ingredients (not garnishes), there isn't any real difference between bottled vs fresh herbs (other than using 1/3rd the amount of bottled vs fresh)

was just curious about if that really mattered. planned on getting a cilantro and basil plant regardless. then possibly rosemary and thyme because why not.

does anyone here use a garlic press?

the amount of time it takes to clean a garlic press rivals the time it takes to mince garlic by hand. i'm conflicted.

i used a garlic chopper my mom sent me until it broke, but i'd never buy one myself. if i need it minced i will either do it by hand or use a grater.

your comment about "taste" seemed a bit shitty and i left a shitty reply.

when added as a mixed cooking ingredient, dried vs fresh doesn't make as much of a different as opposed to using the herb as a flavoring garnish. i was curious as to what herbs you feel necessary to grow fresh vs which ones you're willing to compromise and buy bottled.

Of all the ways someone can insult you! No, I'm not giving into the pressure. Dried herbs taste old and dried even when you buy them new. Just lightly brushing against a basil plant produces the most wonderful aroma. Dried just doesn't compare in some cases. This is my opinion and if yours differs then it's ok.

I took a cooking class in high school and learned that "fact" about dried herbs and salted/unsalted butter and all those things. Bleh, ok. Cooking has been more fun and fruitful when it's intuitive and creative to me. Otherwise it's boring.

so you agree with me yet won't offer any insight to my question.

this is why i edited my initial responses. i knew we couldn't have a real conversation without you taking 1% of it and ridiculing it.
