I don't have proportions.
Grate some sweet potatoes. I actually ran them through the food processor. 2 large sized guys, filled a large-ish mixing bowl. Toss a bunch of corn flour/corn meal in there. Throw in a bunch of plain tahina, which we're using for bonding instead of egg b/c vegans. don't worry it's not weird it tastes delicious. I personally used a whole can like this. sorry BDS lol http://www.nutricity.com/content/ima...ack_of_12.jpeg Now mix it together with your hands. It should be pretty wet and sticky, but also fairly rough and grainy. Kind of like stringy, wet sand. If it feels too dry and doesn't seem to be sticking together, use more tahina. If there isn't enough graininess, more corn meal. add spices, a lot is better than a little: salt, pepper, curry powder, paprika, za'atar form em into pancakes. they will be very wet so you'll want to really squeeze the liquid out of each one over the sink as you are forming it fry those guys up. I just used canola oil. personally I like em when the edges start to blacken as you can tell from teh pics serve with apple sauce and sour cream |

I also suggest doing a test latke before you make em all cause I usually add in more spices after discovering the first one to be too bland.

sorry to steal rbg's wind but if we're already talking about cooking, i am slowly becoming a dumpling lord. i went to a dumpling shop one day and asked the dude there to teach me how the fuck he makes that shape, which i've wanted to learn forever and just couldn't get the hang of it.
after dabbling in fried dumplings, mostly, today i steamed them. they were seriously fucking delicious. also vegetarian, btw, although i do use an egg to bind the mixture. http://i68.tinypic.com/sxitxh.jpg |

as i said, they're vegetarian, so nothing very exciting.
spring onions, fresh tofu, mushrooms, cabbage, egg, soy sauce, pepper, salt, and some spices. Quote:

Also love how in the early part of the paragraph he says they are fresh from the market and only cost pennies (which seem like good things) but then later in the paragraph the wrappers are deemed too dry and not what a good wrapper should be.
It's like first he sets up an elaborate excuse for not making his own wrappers but then later feels the need to diminish these wrappers as not being up to his own high standards. Then takes a pot shot at the guy asking him questions. Yea his ideas for dumplings are probably to fill them with dead possums and trash can juice. Certainly nothing as sophisticated as above. Hilarious. |
