i've always had the opposite problem - the crust is the worst part.

i used to work at papa john's and the cheese would be little crumbles of mozzarella. super good. i have no idea if it's possible to buy that as a consumer, but it'd be better than the lame grocery store grated stuff

i like buying balls of fresh mozz and slicing it up for za and lasagna. pre-shredded kraft-type cheese has a weird white coating on it that i'm not into. did you see what container the cheese crumbles came in, ram?

Thank you! What I do for the crust is more intuitive than recipe based, because I don't use one. Trial and effort for a few years has yielded an acceptable proportion of water/yeast/oil/sugar/salt/flour (I used King Arthur bread flour) for a sticky (but pliable) dough. The overnight fridge proofing definitely works well. I look forward to having a mixer with dough hook in the future.

I enjoy playing with homemade dough. Its enjoyable to work with the ingredients and get a different result each time by trying different things.

I used to be afraid of the kitchen when I was younger. Cooking became a passion at some point. I guess that is what growing up is all about.

But when you put them on pizza they're either too moist and put whey all over the pizza or burn terribly (and taste disgusting). They are best not melted. I don't know what my holy grail of pizza cheese is.

don't know who luke is but neapolitan style is so so fucking hard to do

usually i try to dry off the little mozz balls with a paper towel before pizzaing them. helps a bit

from a place on campus. they say it's neapolitan style but it's actually more new york style

it's pretty good though
