so i don't know about aesthetics......i guess eating beautiful food makes it more appealing when there's no salt or spice. but when you work with fresh foods, natural colors have an organic way of being beautiful on a plate. aesthetics are the last thing on my mind when i cook.
yeah, i was curious about your angle on this because i essentially went through the same thing (almost) last year. i was new and alone at a foreign country, didn't eat meat, dairy, salt, barely ate much of anything at all tbh. refrained from hooking up with anyone and didn't go on dates. it wasn't really a spiritual decision though, just consequence of very dark depression. for the better part of a year my food was mostly an omlette sandwich or brown rice with lentils, no salt or spices. essentially flavorless.

i would definitely agree that you just kinda relearn how to process food cognitively and it just becomes a fuel thing. i have since gone back to eating more properly, and i still vehemently refrain from processed foods and sweet drinks. can't really get people who still eat that stuff tbh, it tastes and feels like poison to me, but to each their own.

yea anything can be perceived as ceremonial and ritualistic if you put your mind to it. glad to hear some common sense on the matter. i have a fairly italo and animal-free asian-inspired diet too but i'm just poor.

This is what I try to do, but it does not (as I'm sure you realize) compute with normative American cuisine. Try to cook like a responsible balanced person and everyone thinks you're crazy or on a diet or something.

the seeds turn brown, but not the flesh. Not with fresh eggplant. Really fresh eggplant, the seeds don't even turn brown. If I cut it open and the seeds are already brown, I toss it or compost it.

I cook pretty much every day. Lentil soup and home made bread sticks tonight.

People say they hate cooking for just one person but I like it because that means I only have to cook once every 2-3 days due to leftovers - deep thoughts
