I would say filling inside pasta shells has no bearing on pasta status. Lasagna is pasta regardless of the fact that you only eat it when it's stacked with sauce and cheese. Same thing with tortellini or other stuffed pastas. But gnocchi has an ingredient which makes it fundamentally different from traditional pastas; potato. I guess what we're digging into here is whether or not pasta is defined by the ingredients or the process. Couscous is the same ingredients but different process, gnocchi is different ingredients, similar outcome. |

![]() we made bucatini with lemony carbonara recently. tim accidentally tossed the reserve pasta water and it changed the sauce so we have to make it again before really deciding if it's a recipe worth making again.
Koshary (also called in a recipe "Egyptian lentil and rice pasta") is one of my favorites to make and eat, but it's labor intensive. I had it at a restaurant and loved it and havent' had it at a restaurant since. Anyone mention polenta yet? I've only started eating it in the last couple years. v good underneath a mushroom ragu or the like. Is it even a pasta? Is it a pulse? ? Last night I almost made orzo salad with kale, chickpeas, lemon and feta for dinner, but I had given Tim two dinners to choose from and he chose kale salad with toasted cajun chickpeas and a home-made buttermilk dressing. He also made a lentil soup last night for us to have during the week for lunches and a lazy dinner. taglierini with bay scallops and meyer lemon. this was also a new one, but it's quite like other pasta except for the shape, which is true of most pasta. i love carbohydrates. and lemon, apparently. Gnocchi sucks. It's little dough balls. I want sauce not dough. Although I had some decent gnocchi for the first time in my life about a month ago but it doesn't change my opinion that gnocchi is mostly garbage. Still it's the worst form of pasta. |
