both are very classic rock in their own ways. The heavy guitar on Gish is reminiscent to me of Deep Purple, Jimi Hendrix, and Led Zeppelin. Lots of swagger, slow and impactful, very blues based with psychedelia sprinkled over top.

SD pulls a lot more from Black Sabbath and Metallica, but also from poppier rock bands Billy grew up with like Cheap Trick and Boston. SD also seems more contemporary in that Bill was clearly pulling from the Pixies, MBV, and possibly even his competition like Nirvana. Gish is definitely less connected to what else was going on in rock music at the time.
