it would be incorrect to follow that one with but " you've never let me down." right? fuck. this is what I always do, I mix tenses.

Yeah, it's fine. "There were times when I thought you might let me down, but you've never let me down."

At first you are referring to the past times when you thought you might get let down, but then you are contrasting that with a clause on the present, which is that you have not been let down by this person up to this moment.
