He might mean Spanish food as in Latino food. Spanish speaking Caribbean islands and central American food differ greatly from Mexican food.

yeah because most of what americans know as "mexican" is infact tex-mex and most central mexican food is quite different. For example I was watching one of those Tony Bourdain shows and he was out in Veracruz and they were making enchiladas kind of like a lasagne dish, and by that i mean they'd layer tortillas and the chicken and queso fresco and then douse it with sauce instead of the european/american cheese covered rollups americans are more familiar with. the other interesting thing was that tamales were wrapped in banana leaves instead of corn shucks.

from what i understand refried beans are not as much traditional mexican as they are tex-mex. flour tortillas are definitely tex mex. the traditional "interior mexican" is black beans and corn tortillas

in fact, even taco toppings are different because from what i understand the more traditional mexican street style from the DF is cilantro and onions on everything but white folks/tex mex want lettuce, tomato and cheese.

i prefer the onions and cilantro

When I went to Panama, lots of the dishes shared similarities with Mexican food - just different ingredients and a more mild flavor. so good though >_<

I had never had whole chickpeas with rice and it was f'ing delicious. i always thought they'd taste grainy whole.

Maaan, and bollos were the shit, especially the 'preñado' ones. They're like tamales you can eat for breakfast - a tad sweet and wrapped in a plantain leaf.

I love yuca now, too.

I guess I could just google "Spanish influence on Mexican cuisine" or "influence of Spanish cuisine on Mexican cuisine." I'm lazy and I thought someone here might be familiar with Spanish cuisine enough to tell me.

For the last couple of days for lunch I've had those nacho toppers that you can get at the grocery store along with some chips. It has grilled chicken, onions, green and red peppers, jalapeno peppers, refried beans, and shredded cheese.

i love nachos, boy! we baked some recently with shredded cheeses, beef, and refried black beans, and when they were done, topped them with crema and hot sauce. s'all i need.

back in the day i used to buy flamin' hot cheetos con limon at 7-11, open the bag and drench the chips with the free nacho cheese and them shake them ho's up. that's tex-mex.

I'd bet that the traditional cuisine around latin america and most eveywhere else is driven more by the available and abundant ingredients than by a 500 year old cultural injection

can i also point out at this juncture that mexico also has its own melting pot going on, al pastor for example is from the greek style of vertical spit roasting. mexican lager is often brewed from a german tradition (just like american lagers, really). Tejano music is, on a very basic level, the merging of german polka with the mariachi band.

i have to listen to polka/mariachi everyday because my office is by a shopfloor full of messicans and sound seeps thru the walls. my fav band is los tigrs del norte. my fav song is the one about the cartel. which is pretty much every song
