the seeds turn brown, but not the flesh. Not with fresh eggplant. Really fresh eggplant, the seeds don't even turn brown. If I cut it open and the seeds are already brown, I toss it or compost it.
I cook pretty much every day. Lentil soup and home made bread sticks tonight.
