anyway I made a braised lamb shank the other night. covered in ground Szechuan pepper, garlic, ginger, preserved lemon rind paste, soy, mirin, sua
sugar, wine, beef bone broth, sea salt, cilantro, green onion at the end oh and thickened to a gravy with whole milk and corn starch and more broth. ate the fuck out of it the next day because I ended up with a migraine by the time it was done and had no appetite.
