They take the meatballs they use for something else on the menu and put them on their shitty bagged mixed greens.
When I ran a kitchen my boss would always try to force me to make a twenty page menu by mixing and matching everything we had in the kitchen. This is why so many places have reuben that are not reuben. Hey take that shitty sliced meat we use for that sub and throw some sauerkraut on it, who care it's now a genoa reuben.
