Strange, jaw-dropping riffs, hypnotic repetition, multiple singers with vastly different approaches (super aggro punk screams on 1 track, haunting, smooth falsettos on the next) and some of the most thickest, delicious guitar tones on the planet.
But mostly the riffs. IMHO Joshua Homme is an unparalleled crafter of a riff library so diverse, so bizarre, so improbable, so sickeningly catchy, that they often take over my central nervous system and send my limbs flailing in all directions.
Haven't listened to em as much since I quit drinking, tho, for whatever reason
