I feel as though they've kept Brienne on for the past two seasons simply because she's a fan favorite. Her character does nothing (on the tv show) to advance the plot. Since she fought the Hound there's been nothing going on with her story line of any substance. Although, it might be that at the very end of the series she plays some important roll.
