Favorite ways to eat vegetables
I need to eat more vegetables before my body shuts down. How do you eat em? Post yer favorite recipes. Cauliflower fans need not reply

Deep-fried cauliflower has my support.
I might have mentioned this before, but I'm also a big fan of roasting Brussels sprouts smothered alongside little strips of bacon in a maple syrup and olive oil mix. A ratio of about two parts oil to one part syrup'll help stave off the burn. |

I like veggies in salads, stir fry, sauteed, grilled, baked, and piled high on sandwiches and pizza. I'm into it.

The squash family is a personal favorite, baked or broiled. Spinach and mushrooms can be added to almost anything you are already eating, and veggies together make a great soup. Spices are your friend!

As for me I like broccoli stems. You just peel off the skin and eat them raw with some salt and sometimes some pepper too. Does anyone else here do this? I've never met anyone who does but I've converted a few in my day

I struggle to get enough vegetables. I was told my taste buds would mature but I think they stopped like halfway

roasted pumpkin, baby spinach and torn fresh basil, toasted pine nuts and crumbled feta with a drizzle of balsamic vinaigrette is probably my #1 favourite way to eat vegetables.
My go-to, every day way to eat them at the moment is to dice or slice, and sauté with a small amount (1-2 tsp) butter or olive oil, sliced fresh garlic and salt and pepper. You can add a squeeze of lemon or lime juice, and some fresh coriander or fresh parsley (or both) and fresh finely diced chilli. I don't mind salads, but I don't usually love them. Maybe it's because I grew up in a cold climate. I prefer soups. But I love how I feel after eating salads. My favourite salad is probably a slaw with an Asian twist, so cabbage, onion, carrot, fresh mint & coriander, fresh chilli, and then tossed with a dressing of fish sauce, lime juice, palm sugar, sesame oil, salt and pepper, and topped with crushed roasted peanuts. That's a lot of fuss for a salad though. We eat a lot of green salad - leaves, cucumber, tomato, vinaigrette. And then sautéed veggies, a starch and a protein. Same shit, different day...I was a better housewife before I had to organise rugby uniforms, swimming gear, brass instruments, homework, etc. Now I'm kinda tired at dinner time and food is fuel, and if you're hungry you'll eat it, if not, you can eat again tomorrow... |
