I'm doing an apple pie, which is largely motivated by my seething hatred for the apple crumble alternative that seems to be on every menu everywhere.

mmm homemade coffee cake is the bomb, but it doesn't save well. too bad i have no reason to make a giant dish because i don't want to waste it all.

last night i made sauce with canned tomatoes, 1/2 onion (not chopped, just a whole 1/2), grated garlic, oregano, pepper flakes, brown sugar, and salt. just simmer for 60 - 90 minutes.

we used some with pasta and tonight we're making pizza with mozz, spinach and more tomatoes (on Tim's half).

apple pie is the best pie!! well maybe peach is just as good...but I'm really only a fan of fruit pies. Creme or custard pies are just a goopy mess and way too sweet. my husband's family really likes making this egg custard pie and it's honestly totally disgusting. she's a great cook so i know it's not her fault it's bad..it's just a nasty concept to start with. Pies with a bucket of whipped cream on top instead of a crust are also unfortunate. You can't even tell what flavor it is anymore besides "sugar!"

oh i see y'all are on budget bytes. i make a number of things from her blog all the time. particularly the italian sausage and crushed pea pasta, and those curried chickpeas.

may i also suggest the stone soup as a minimalist cooking blog

reprise is the only one who has said she uses recipes from that site. y'all.

lots of those sites bastardize ethic food, so i tend to avoid them. mexican food is already inexpensive to make, but it can be very involved, which is what i think you all are trying to avoid.

what you call minimalist, i call lazy and a housewife calls quick week-night meals. i can be lazy, though.

i made a big pot of the creamy tomato spinach pasta last night. except with mushrooms instead of spinach. really good, and for like $5 I made like 7 servings. i also ordered some bento-box type freezer/fridge/microwave safe containers to make my own kind of frozen meals from leftovers that i can pop from freezer to microwave. going to try to always have 5 or so in there ready to go, plus some breakfast bowls. http://www.amazon.com/1-Compartment-...ct_top?ie=UTF8

made this yesterday finally after hankering for it for months. Kartoffelnsalat. Doesnt look like much cause it isn't much... Just diced boiled potatoes, onion, bacon, vinegar, bit of sugar, bit of flour. Now i got the cheapest bacon ever and it was ridiculously fat. Normally you fry the onion and pour the vinegar and sugar and flour in the bacon fat after you cooked it but there was so much fat, I decided to pour most of it out...until miya came to help, saw what i was doing, basically went all "step aside pussy" mode and grabbed the bowl containing what was like 1 cup and a half of liquid bacon fat as i exclaimed "you're not gonna pour all this in with the onion!!???!" (i actually nearly audibly gasped) to which she said "oh yeah" and proceeded to do so.

Not exactly low cal.... Potatoes and loads of fat. But good. I like to have it in the morning as a side with eggs. You've got your fry-up potatoes and bacon already cooked.

crock pot changed my life

instead of fucking around checking on maranara making sure it doesn't boil over or pop i throw everything in a crock pot and turn it on and walk away for six hours. i don't even need to cook the sausage to make sure it's done. One pot, shit ton of food.
1 can diced tomatos
small can of tomato paste (well more if you like it thick, i don't)
1 can tomato sauce
veggies to taste
basil, oregano, salt etc
meat if you desire
that's about it

i made chicken thighs and a can of chipotle tomatoes in the crock pot and it knocked my dick in the dirt

it was amazing

i had been shredding chickens with forks and shit to make shredded chicken and my friend goes "no you just steam that shit bro and it falls apart"

and now my enchiladas are NEXT LEVEL SHIT

i make my own verde sauce. get tomatillos, boil them till they are army green then drop em into a food processor and blend them shits up with cilantro, hot peppers (i find serranos are best), onion and salt (key). I've been dropping an avocado in there lately also, makes it nice and creamy.

i have this weird thing with leaving a crock pot on when i leave the house. it freaks me out. i know that it is specifically for that, but i haven't been able to get over it yet. i think it's a holdover from my car fire.

the sauce i made was a double recipe of

garlic, 2 cloves
onion, 1 small
8oz mushrooms
1 can diced tomatoes
basil, oregano, salt, pepper
2 tbsp tomato paste
1/2 c. water
2oz cream cheese
1/4 cup parmesan

then throw a 1/2 box of cooked noodles right in the saucepan/pot and that is it

like i said i doubled everything so i have like 3lbs of this stuff. it cost like... $6 max

Why does everything have cream cheese and mushrooms. I dislike both.

Um so I'm going to make grasshopper ice box cake for my BF and I once I get back to NJ. Looking forward to it. Grasshopper just means mint. I will use as few dairy products as I can

Edit: I only mention my BF because if I didn't have one, I wouldn't make food like this. He's the only person I know that would eat it with me and not judge me

bonnie, mushrooms i feel are absolutely crucial to tomato sauce. there's so much missing when they aren't in there BUT my recipe there is like, at will. put bell pepper in there, whatever. it'll be good so long as it's not like chocolate and bouillabaisse or some kind of crazy thing
