View Full Version : can i marinate red meat for 3 days? or will die of poisoning?

i took a piece of red meat from the freezer 3 days ago, dumped it in a glass container and covered it with marinade. did i wait too long? am i going to die if i eat it?

i suck at cooking. help please. ;/

I wouldn't use it, but I generally don't even eat leftovers that have been in the fridge for more than 3 days.. I'm pretty paranoid about food poisoning.

You can marinade stuff in the fridge you know. And I think that it's going to reach its maximum flavor potential after a day, if not earlier. :D

oh but it's not leftovers. it was a raw pieace of steak that i marinated to i could cook it. i just got lazy and never got around to it yesterday or the day before.

fashion a fairly large plastic tube shaped like a giant U, with a flared opening off to the side of your throwing arm, and a more narrow end aimed directly at your face. lube up the inside of the tube iwth some of the marinade first. then pick up the slimy piece of meat and throw it into the flared end of the U as hard as you can, and be sure your face is aligned iwth the other opening of the tube!

Judgement call... It'd probably be better if it had been in a plastic bag instead of open like that... I accidently forgot about chicken in a baking pan like that for 2 days and had to throw it out-- but if it had been in a plastic bag, it would have been fine.

ok, do 2 things, then.

1- feel the meat. does it feel kind of dried out or unusually stiff or anything? throw it out if it does.

2-smell it. does is smell not right? throw it out if it does.

If it feels okay and smells okay, then you're probably fine

(It's probably just fine, but I'd feel bad if I said, "go ahead and eat it!" and you got food poisoning or something. haha)

I've always read in cookbooks not to leave defrosted raw meat uncooked for more then 24-hours in the fridge.
