I would choose Hallelujah, J Buckley version. I know I talk about it too much already, but it's honestly the most ethereal, beautiful piece of guitar playing I've ever heard. I love the lyrics and singing as they are, but i still wish i could have made my own input. Maybe I will do that anyway for fun, but it couldn't be commercially viable and it would make me a total judas of a buckley fan.

other than that, i think i'd be doing the world a favour by changing almost every muse lyric
