I have two boneless chicken breasts. How should I cook them?

They will be unthawed, but I am a bad cook and don't have special shit that you people always talk about.

I like pretty much any kind of food, but will not have an opportunity to go to the store, so I can't buy things out of the ordinary to marinade the chicken with, etc.

What is a bad cook to do?

If you have an unsweetened cereal like, rice crispies, crush it up and add some favorite seasonings to taste. Dredge the chicken a little bit of margarine, then coat in the cereal mixture. Bake at 350 for about fifteen to twenty minutes.

Or, if you have any ham or cheese, pound the chicken thin and place a slice of ham and a slice of cheese on it, then roll it up and stick it with a toothpick so it stays and bake for about the same amount of time.

wash 'em under warm water so they thaw out a bit. sautee them in some olive oil, butter, salt, garlic...uhm. what kind of spices do you have? lemon pepper is always good.

The last one sounds doable. I have no idea what any of that first paragraph means, dear. :)

OK, so this pounding thing. How would I pound it flat? And how do you "roll" a piece of chicken ... you know, it's fairly thick?

I don't have any olive oil. I don't have many spices because I don't cook things much, but am eager to learn. I just can't get to a store this time to do it.

I have pickle relish!$%! haha :erm

No mallet, will a hammer do? :)

The first one is easier.

My mom has a mallet that she pounds out chicken with. And the chicken rolls easily once is thin...you just have to make sure you stick it with the toothpick so it doesn't unroll.

Probably, as long as you have a covering over the chicken so you don't get raw chicken nast on your hammer.

you don't have to use oilive oil...i just prefer it to corn oil and the like. do you have flour, bread crumbs, eggs, and milk? you could make a chicken schnitzel.

Melt some butter or margarine, then dip the chicken into it so that a coating will stick to it.

what actually works better is to not use wax paper at all,or a hammer.
use your fly swatter instead.:)

why would you do that to a nice piece of chicken?

Or, if you have any ham or cheese, pound the chicken thin and place a slice of ham and a slice of cheese on it, then roll it up and stick it with a toothpick so it stays and bake for about the same amount of time.

that one just sounds nasty.

sorry i guess we just don't have the same taste...

i say cut it in big dices and stick it in a pan with onions and peppers (or more vegetables, according to what you've got) and make some rice to go with that.

kickass. it's easy to make. pound the chicken and season them with a little salt and pepper. coat them with flour and then shake off the extra flour. then brush the chicken with egg and finally coat with the bread crumbs. heat some oil and butter in a skillet and then cook the breasts for like 3 minutes on each side. cut open the inside to see that it's not still pink and voila. if you've got a brown gravy mix, that's really good with it. and lemon juice.

if you have italian dressing, it works well for a marinade.

Want to come cook for me? I'll provide the food if you provide the cook-ery. :)

Oh, and how much of the egg should I rub on the chicken? Just break one and rub the yolk on it?

that i dunno for sure. i've seen recipes that call for one whole egg per cutlet but i think that's just wasteful. so just go with how much you think you should use, ya know, depending on how big your breats are MUWAHAHAHAHAHAAAA!1

ps: i'd love to cook for you!

i would use one egg, btw

mix an egg up in a bowl, dip the meat into the egg, then put meat in flour or whatever you got. put some spices on it.

put whatever oil you have into a pan and get it hot.

throw the chicken in the pan.
throw veggies in if you want.
cook chicken untill the center is white.

done.

you just throw the chicken on a big peice of tin foil, season with something yummy.. salt, pepper, rosemary, thyme, lavendar, bbq sause.. wahtever flavour you like on your chicken. fold sides of tin foil up, crimp edges so the whole things in a sealed package and bake at 375 for 40 minutes.

tender, wonderful, easy perfect chicken every time.

but it's too late

This is for lunch tomorrow actually ... I am planning ahead!

I might try a few of the ideas tomorrow actually since I have the day off and no plans.

Damn, did I miss this?

1. Put the chicken breast flat on a cutting board. Take a sharp knife, and cut into the the chicken laterally. In other words, from the side. Keep going towards the other side of the breast, but don't cut all the way through. Then open the chicken up like a book. You should have one piece of chicken that is twice as big surface wise, but half as thick.

2. Get a large saute pan, and put in just enough extra virgin olive oil to coat the bottom of the pan. If you don't have olive oil use what you have. Get the pan hot, until the oil is almost smoking. You want to see the oil shimmering.

3. Season the chicken AGRESSIVELY with salt and pepper. We're talking a good healthy pinch of salt on both sides. Put the chicken in, with the pretty side (the side that you didn't cut open) down. The pan should sizzle and pop, if it doesn't, take the chicken out and try again in a minute or so.

4. Leave the chicken alone. Make sure it isn't burning or anything, but otherwise just leave alone. Depending on how big your breast is, this should take 3 - 5 minutes.

5. Flip the chicken. Use tongs. Don't be afraid. Make sure its nice and golden brown on that side. Cook it for another 2-4 minutes. Cut a slice into the thickest part and make sure there is no pink.

6. If you want to get really fancy, and if the stuff left in your pan isn't burned up, take about a 2 inch square of butter and throw that in the pan, and swirl it around until it melts and gets light brown. Pour that over the chicken and you have an instant brown butter sauce.

That shouldn't be as hard as it looks in writing.
