the recipe i got suggested a spicy chinese mustard to dip the rangoons. at least we can agree that they don't need a dip!

fiddleheads are SO GOOD. they're a fern regional in east coast canada, but you can get them in vermont and some of the maritime states. they taste a lot like asparagus but better!

i've gotta figure out how to make the paneer. it'd be easy to make at home.
it's one of the easiest cheeses to make: How to make Panir (http://biology.clc.uc.edu/fankhauser/Cheese/Panir.html)

if you're going to make curry with paneer, i recommend cooking everything except the rice a day in advance. the paneer will absorb lots of flavour from the gravy overnight, and you can just reheat the curry in a microwave oven

tikka itself is traditional indian tandoori chicken, but it comes dry

supposedly some bloke asked for a sauce for it in the 50s or 60s in some indian restaurant in glasgow and the chef came up with it, which is why the sauce ingredients tend to vary so wildly depending on where you get it

hungover sunday left me hankering for something wholesome to eat that night. picked up a nice leg of free range organic lamb at the market in the afternoon. rubbed that puppy up with loads of sea salt, black pepper, bit of cumin, lots of fresh rosemary and olive oil. put it in the oven and cooked it slow and low for about 5 or 6 hours. perfect. made a gravy out of the pan juices (mirepoix, butter, red wine, stock) and served with sesame seeded green beans, roasted pumpkin and a roasted garlic and potato mash. did i say perfect?
leftover roast lamb sandwiches with red onion, baby spinach, some leftover pumpkin and hot mustard for lunch today.

i'm sick of people acting like hummus is some kind of delicacy. It is gritty and bland and tastes very much like mud. Every time I've given it a try I've completely regretted it. Yet I keep trying it because there's so many people who act like it's the best thing since cheese. And there are so many other things that actually taste good and have a pleasing consistency, I can't possibly fathom why anyone outside of the middle east would want to bother eating this. I'd rather eat a six pound block of feta cheese before I'd even take a sample of hummus again. I mean this is just generally kind of like the whole problem with the general cuisine in the first place, I mean there's good shit like gyros and shishkebabs and cucumber yogurt and fucking feta (hell yes) but there's so much gritty, salty, or vinegary shit in Mediterranean and Middle Eastern food, I just don't understand the fad at all. And before anyone tries to bark up my ass like I don't know what I'm talking about I worked at a "Mediterranean" restaurant for several months. I don't particularly like olives that much in the first place and they're fucking everywhere.

i dunno how you're going to compare a statement of taste with something of total factual inaccuracy but you can go stick yer hummus up your ass where it belongs.

or all the middle easterners and arabs that were in the restaurant all the time ordering hummus.

wow, the chicken worked out better than i thought! i dipped the breast cutlets into some seasoned egg, then covered them in a mixture of shredded parmesan and these italian breadcrumbs that had some other herbs and spices mixed in. i figured with my lack of talent, the batter would just kind of cook off as soon as i put the chicken in the oil, but it turned into this lovely crispy coating that browned up beautifully. :)

That had the feta, peppers and basil. It's bound together with very fine breadcrumbs.

Oh, it's also a mixture of ground chuck (85/15 I think) and a bit of lamb.

most people make crappy burgers, but if you add amazing things to them.. oh they are so so good. for example, your feta, basil, and lamb sounds like it made a great burger.

I wanted something kind of cool and crunchy. The basil leaves were finely chopped and wrapped up into the beef. Burgers tend to be greasy so I try to stay away from them for the most part.

a fish burrito is not a fish burrito unless the fish is breaded & deep-fried. i used lime perrier instead of beer for my fish batter. stuffed in the spinach tortilla along with are: cilantro, avocado slices, salsa, refried beans & shredded pepperjack cheese. i don't have a sandwich press (yet) so i squished & toasted it on the foreman, which worked just as well :)

btw the fish is haddock.

i chopped up some red peppers and garlic and cooked them in olive oil. i added some salt and pepper, then mashed up an avocado to put in with the peppers. i let that cook for a while as i was melting cheddar cheese on wheat bread in a toaster oven. when everything was ready, i put the paste on the bread and ate it good.

I sauteed some squash (simple- butter, sea salt, and pepper), roasted some sausage in the oven, and did some brown rice to go along with.

baked chicken teriyaki (sooo delicious and juicy, it'd been marinating for 12 hours and i fried it a little before baking), nasu dengaku (not my best miso sauce, but the eggplant was cooked perfectly) and sesame noodle salad (with oyster mushrooms, green onions & grated carrot)

ive been roasting chicken breasts coated in cumin, turmeric and garam masala

stick one of those packets of pre steamed rice in the micro

then i grab one of the breasts, slice it up, put it in a bowl and mix in some curry sauce and half the packet of rice

micro that for a few seconds more then stick in a wrap. leave the other breast and the other half pack of rice for the next day. pretty cheap, fast and easy chicken curry wraps for lunch

Roast two poblanos in cast iron until fully chared, skin side up. Remove from heat and reserve. Add half a large sweet onion to pan, roast until lightly charred and starting to cook through. Remove skin from cooled peppers, dice, and add back to pan with whole grain mustard, a big pinch of brown sugar, S&P, and just enough water to help it start to come together. Heat until onions are cooked through and relish begins to come together.

Aggressively season burgers with S&P and grill to desired doneness, topping with Beltane Farm or other brand goat cheese after the flip. Serve on toasted buns.

oh man. I just made the best fucking dinner, so I thought I would share.

Sauteed some mushrooms in butter, added salt, pepper, garlic. Add lemon juice, bring to high simmer and let it cook down. Add cream. Simmer for 5 minutes, then mix in some fettucine.

With some fresh baked 'tuscan' bread. Dear god. Phenomenal!
