I make my regular old school meat sauce and ricotta lasagna, but I also have a very trailer-trash mexican version in repertoire.

When I really want to break out the fancy pants, though, I can do a lasagna with green noodles, a very rich bolognese with tons of veggies and meat including chicken livers, a lovely bechamel, and crispy fried baby spinach leaves to garnish. That's some hard core stuff though, I only break that out once a year or so unless I'm lookin' to get laid.

I only do it with veggie lasagna not every hot dish I eat so maybe it just happens to be delicious in that specific combination.
