love the stock. I'll stand over the stove for 6 hours and let those bones DRAIN to get a nice golden stock.
I brown the bones in the oven first to make it even more golden. lots of good veggies for flavor: celery, onion, carrots, parsnips, garlic, leeks, a tomato, bunch of herbs and bay leaves and peppercorns.
